If you had an overly busy week, did not sleep the best and felt some stress, then miso soup is a very good thing to make and eat.
That is what I did!
Miso 101: It is delicious and very nutritious. Ancient wisdom and scientific facts agree on the numerous health benefits of eating miso.
Miso Soup 101: Add wakame seaweed, maitake mushrooms and your favorite vegetables and you have a magic formula for a healthy healing soup. It will likely make your belly, body and mind feel better.
Miso Soup 🍲 Serves 4
Ingredients:
1 medium onion, chopped
3 maitake mushrooms, sliced
2 teaspoons ready to use Wakame seaweed (pictured below)
1 carrot, sliced
1/2 buttercup winter squash, chopped in bitesize pieces.
1 parsnip, sliced
1 cup cabbage, chopped in bitesize pieces.
1 tablespoon barley or brown rice miso (pictured below)
1/4 teaspoon oregano (optional)
1 quart water
Fresh parsley sprigs
Directions:
Place vegetables and wakame into heavy soup pot.
Add the water and cover. On high flame, bring to a boil. Reduce flame and simmer for 15-20 minutes.
In small bowl blend miso with 3-4 tablespoons liquid from pot.
Reduce flame to low; add diluted miso and oregano.
Simmer for 4-5 minutes.
Serve with garnished with fresh parsley and enjoy!
P.S. Cooked rice or noodles can be added for heartier soup.
