Orange Sesame Cookies
Makes 30 to 35 cookies Preheat oven to 350 degrees F.
- 1 ½ cups oat flour
- 1 ½ cups rolled oats, partially ground in the food processor
- ½ teaspoon sea salt
- 1 teaspoon baking powder
- 1/3 cup sesame seeds, toasted
- ½ cup maple syrup
- ¼ cup apple or orange juice
- ½ cup tahini, also known as sesame butter
- 1 teaspoon orange extract
- 2 teaspoons vanilla extract
- Grated rind of ½ orange
- 2 tablespoons fresh orange juice
- 1 tablespoon water
Instructions:
- Mix the dry ingredients.
- Whisk together the wet ingredients.
- Add the liquid mixture to the dry ingredients and blend until well combined.
- Drop tablespoon-sized portions of the cookie dough onto a cookie sheet and flatten them. You can place them close together as they do not spread much.
- Bake for 10 minutes. Then, turn the cookies over and bake for an additional 5 to 10 minutes or until lightly browned. Keep a close watch to prevent over-baking.

Fun Note:
