Vegan Shiitake & Maitake Mushroom Soup

Shiitake and maitake mushrooms provide antioxidants, immune-supporting compounds, and a rich umami flavor that makes this soup deeply satisfying.

Ingredients

  • 1 yellow onion, diced
  • 2 tablespoons olive oil
  • 3 cups fresh shiitake or maitake mushrooms, sliced
  • 4 cups vegetable stock or water
  • 2 teaspoons sea salt
  • 2 teaspoons garlic, crushed
  • ½ teaspoon dried thyme
  • Dash of freshly ground black pepper
  • ¼ cup fresh parsley, finely chopped (divided)
  • 2–3 tablespoons kudzu powder
  • 3–4 tablespoons tamara

Directions

  • Heat the olive oil in a soup pot over medium heat. Add the diced onion and sauté for 3–5 minutes, until softened.
  • Add the sliced mushrooms, sea salt, black pepper, crushed garlic, and half of the parsley. Continue sautéing for about 2 minutes.
  • Pour in the vegetable stock (or water) and bring to a boil. Reduce the heat and simmer for about 20 minutes.
  • Stir in the thyme.
  • Dissolve the kudzu in ½ cup cold water until completely smooth. Slowly pour it into the simmering soup while stirring constantly.
  • Simmer for another 5 minutes, allowing the soup to thicken slightly.
  • Stir in the tamari and taste. Adjust the seasoning if desired.
  • Ladle into bowls and garnish with the remaining parsley. Serve with whole-grain croutons if desired.
